Our small batches start with a Southern cuisine-inspired, mash bill of 75% white corn, 12% winter white wheat, and 13% malted barley. For Batch 1, we used more energy intensive low temperature fermentation. As a result, the yeast activity is more restrained, which allows for a distinct and more complex flavor profile.

This 48 barrel release set the template for our wheated bourbon small batch collection. It has a one of a kind but approachable profile for seasoned bourbon consumers and newbies alike.
